Review of Dororo
I cannot compare the 2019 Dororo adaptation with the 1968 adaptation, because I have not watched the latter. But I can say that the 2019 adaptation was highly impressive, if not outstanding. Although the anime had its flaws, it lived up to the expectations of Tezuka Osamu's works. The 2019 anime adaptation slightly drifted away from the source. Hyakkimaru (the protagonist) lacks 48 body parts (organs, limbs and senses) in the manga as well as the 1968 series. But here he lacks 12, meaning he'll have to fight 12 demons to get his body parts back. I believe this change was logical and made moresense overall. Dororo's first episode was exciting and sets the bar high for the rest of the series- both a good thing and a bad thing. (There are NO spoilers below)
The first few episodes hook the viewers to the series. But the anime never again reaches the greatness of its first few episodes. The animation was very good in the beginning, but it does slack off later before picking it up around the 20th. The complexity of the characters was well portrayed (though I've read many people say that the characters have no depth). Given that Hyakkimaru has never felt anything before (due to the lack of his senses), changes in his personality is very subtle throughout the series as he cannot immediately be explicit with his desires or feelings, but it is obviously there. Dororo, on the other hand, is a more expressive character than Hyakkimaru.
Leaving aside the two protagonists, there are only a few other characters that have any importance in the anime. Hyakkimaru's family, the man who took care of him, Itachi, the priest and Mio. The rest of the characters seem more filler-like, who have little to no importance to the main plot. But considering the fact that Hyakkimaru and Dororo are travellers who are finding and defeating demons (so that Hyakkimaru's body parts are returned), I don't see how the characters they meet on their journeys need to play an important role. These characters are more of "Oh, I met this guy on the street the other day...," and don't necessarily have to have a role to play in your life after your meeting. The exception would be Mio, who had a lasting impact on both the protagonists as seen in the ending. Speaking of the ending, the ending was a little underwhelming- definitely could have been better.
Overall the anime was very good. As mentioned earlier, it is no masterpiece. The music should have been better, so should have been the fight choreography (which would have made it epic). It had the potential to be one of the best, but it wasn't used to the fullest. But the anime is definitely worth a watch and is truly enjoyable. If you like it, then it'll leave a lasting impact (just like it did for me).
